A great chutney which adds vibrant flavour to a huge variety of dishes including salads, sandwiches and pasta. And if you're feeling adventurous why not add to chorizo, prawns and rice and enjoy a spicy Jambalaya!

For the perfect Jambalaya, place a wok or frying pan over a medium heat. Add sliced chorizo and start cooking.
As the oil is released, add a chicken fillet, cut into bite sized pieces, chopped leeks and onions. Sauté for 5 minutes – long enough to colour but not burn.
Add quartered mushrooms and stir. Add rice and mix through.
Add 2 tbsps of chopped tomatoes, 2 tbsps of Arran Tomato and Red Pepper Chutney and 200mls of boiling water. Stir occasionally and allow to simmer gently for 10 minutes until rice is nearly cooked and juices almost absorbed.
Lastly add 75g of cooked shrimp and heat through thoroughly. Check the rice is cooked and adjust seasoning to taste. Serve immediately in heated bowls and enjoy!
