Scintillatingly Sweet & Sour...
Soft pears and deep red plums create a deliciously sweet chutney with a fruity punch. Perfect in a curry, as a dip or even in a fruit crumble!
Try this with...
Fruity Chicken Curry. In a generously sized frying pan/wok, heat oil and sauté 225g of chicken pieces until browned. Add a chopped onion and a peeled and chopped garlic clove, continue cooking over a medium heat until soft.
Add the spices, 2 tsps of medium curry powder, half a tsp of ground tumeric, and half a tsp of ground corriander, cook for a further couple of minutes before adding 2 tbsps of Arran Pear and Plum Chutney, 300 ml of chicken stock and 50g of dried apricots.
Stir and allow to simmer gently for 10 minutes to thoroughly heat through and blend flavours. Check from time to time and add a little water from the kettle if necessary.
Meanwhile cook rice to taste then drain rice and return to pan. Add cardamom seeds and spring onion slices to rice.
Serves 2 in warmed bowls on a bed of rice.
