White Chocolate & Raspberry Cheesecake
Paterson's Clotted Cream Shortbread fingers make the ideal base for cheesecake. To make this delicious dessert simply crush 200g of Clotted Cream Shortbread and mix in 100g of melted white chocolate. Press this mixture into 4 tart tins to form a base and plce in the fridge for 15 minutes to set. While the bases are setting whip up 150ml of double cream and fold in 150ml of condensed milk. To this mixture add the juice of a lemon and 50g of crushed raspberries and stir thoroughly. Pour this mixture into the cooled bases, smooth with a pallete knife and leave to set. Voila- a delicious dessert set to impress!
